Kerli’s Kitchen: Shamelessly Delicious Estonian Toffee/Corn Puff Cake

I have a special treat for this week’s DIY Tuesday – a recipe for my favorite dessert. It’s an old Estonian classic and my mom has made it as long as I remember. It is ridiculously easy to make but if you haven’t cooked before, you might wanna ask for help.

What you need:

-butter

-toffee candy (I am using “Kalev” toffee. “Kalev” by the way is the oldest, most loved sweets company in Estonia)

-corn puffs…can also use lucky charms or rice puffs.

-cream (optional)

First, melt the butter.

Then slowly add the toffee (I used 2 packs), stir on low heat until it’s all melted. Mom says she sometimes adds cream for a more liquid toffee mix so it all attaches to the corn puffs better.

Add corn puffs, stir until the toffee is equally spread.

That’s pretty much it!

Now you can use a baking sheet to press the corn puffs into whatever shape or you can press it into a container. My mom uses clear kitchen film and an aluminum dish to make hers.

Let it cool in the fridge for a couple of hours or even better, overnight, until it gets hard.

Cut and serve!
