Eating Pretty

I get a lot of questions about what I do to stay fit and healthy, so I thought I’d post an example of what I might eat and do for exercise on a random day.

Breakfast: – Coffee – Water – 2 hard boiled eggs – bowl of strawberries and blueberries

Lunch: – Healthy tuna salad over a bed of baby spinach: mix tuna with 1 tablespoon of extra virgin olive oil, 1 tablespoon of lemon juice, a pinch of salt and pepper and 1 tablespoon of fresh basil. – Fresh juice: 1/2 cucumber, 2 carrots, 1 green apple, 1 handful of kale

Snack: – Frozen strawberry & banana smoothie (one frozen banana, 1 cup frozen strawberries, 1 cup water!)

Dinner: – Grilled salmon with pesto sauce – Steamed broccoli – Roasted beets

Snack: – 1 cup of chiapop, a healthy popcorn with ground chia seeds – A bowl of fruit (I love fruit… I could eat fruit all day every day. Lucky it’s healthy!)Exercise: – 20 minute walk with my puppies – 1 hour cross country horseback ride
