S'more Sandwich Cookies
3/4cup butter, softened
1/2cup sugar
1/2cup packed brown sugar
1egg
2tbs milk
1tsp vanilla extract
1-1/4cup all-purpose flour
1-1/4cup graham cracker crumbs (20 squares)
1/2 tsp baking soda
1/4 tsp salt
1/8tsp ground cinnamon
2cup (12oz) chocolate chips
24-28 large marshmallows
In a mixing bowl, cream butter and sugars. Beat in egg, milk, and vanilla. Combine the flour, graham cracker crumbs, baking soda, salt and cinnamon; gradually add to creamed mixture. Stir in chocolate chips.
Drop by tablespoonfuls 2in. apart onto ungreased baking sheets. Bake at 375° for 8-10min. oruntil golden brown. Remove to wire racks to cool.
Place four cookies bottoms side up on a microwave safe plate; top each with a marshmallow. Microwave, uncovered, on high for 16-20sec. or until marshmallows begin to puff (do not overcook). Top each with another cookie. Repeat.
Serves: 2 dozen
