Apple Pie Bars

4cups all-purpose flour
1tsp salt
1tsp baking powder
1cup shortening
4egg yolks
2tbs lemon juice
8-10tbs cold water

Filling:
7cups finely chopped and peeled apples
2cups sugar
1/4cup all-purpose flour
2tsp ground cinnamon and a dash of ground nutmeg

Glaze:
1cup confectioners' sugar
1tbs milk
1tbs lemon juice

In a bowl, combine first three ingredients. Vut in shortening until mixture resembles coarse crumbs. In a bowl, whisk egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. Chill 30min.
Roll out one portion of dough between two large sheets of waxed paper into a 17x17in. rectangle. Transfer to an ungreased 15x10in. baking pan. Press pastry onto bottom and up sides of pan; trim pastry even with top edge.
In a bowl, toss the apples, sugar, flour, cinnamon, and nutmeg; spread over crust. Roll out remaining pastry to fit top of pan; place overfilling. Trim edges; brush edges between pastry with water or milk; pinch to seal. Cut slits in the top.
Bake at 375° for 45-50min. or until golden brown. Cool on a wire rack. Combine glaze ingredients; drizzle over bars before cutting.
Serves: 2 dozen
