The best in the universe!

If you like the samoas girl scout cookies, these are almost even better.

Samoas Cupcakes



basic brown sugar cupcake:

3/4 cup butter
3/4 cup brown sugar
2 eggs
1-1/3 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 cup milk
1 tsp vanilla

Preheat oven to 350

1. Beat butter on high till fluffy, add brown sugar and continue beating till fluffy.
2. Add eggs one by one.
3. In a seperate bowl, whisk flour, baking soda, baking flour, and salt.
4. Measure out milk and add vanilla.
5. Take turns adding both the milk mixture and the flour mixture to butter/sugar.
6. Drop (by two spoonfuls)  into cupcake pan.
7. Bake for 20 min.


Coconut topping:

2 cups coconut
1 egg
5 oz evaporated milk
2/3 cup sugar
1/2 cup butter

(You will also need 1 tub dark chocolate frosting  and 1 jar caramel ice cream topping for assembly)

1. Toast coconut for 10 mins at 350, stirring frequently.
2. Beat together egg, evap milk, sugar, and butter in medium saucepan, over medium heat for 15 mins. stirring very frequently.
3. Stir in 1 cup toasted coconut (sit aside the rest)

Assembly:

1. Once cupcakes have cooled, cut a hole in the top.






 2. Drop 1 spoonful carmel topping inside, then top with frosting.
3. Put some of the coconut mixture on top of frosting and sprinkle with left over coconut.
4. Eat them.

Thai Red Curry by Ikky-G

This is my entry for the Quirky Cookery Contest :D

Thai Red Curry by Ikky-G

Ingredients:

Meat: 2 Chicken Breasts. If you're a veggo, you can use tofu for the same effect. To really mix things around this also works with beef, prawns and fish.

Vegetables:

  • 1 Red Capsicum 
  • 2 Onions, Quartered
  • 2 Carrots
  • 1 Tin of Tiny taters (Must be tiny taters, as normal potatoes go soggy blehh)
  • 2 Tomatoes
  • 1 Tin of Mixed Asian Vegetables {Water Chestnut, Bean Sprouts, Bamboo Shoots, Baby Corn}
  • 1 Broccoli

Chop the vegetables!

Flavourings:

  • 1 550gm Tin of Coconut Cream (20 ounces I think)
  • Sugar to taste
  • 5 cloves of garlic (less if you're not a fan of garlic)
  • Around 3 tablespoons of Thai Red Curry Paste (To Taste as some brands are stronger than others. I use Trident). If you prefer Mussoman Curry, use Mussoman curry paste instead and a couple of tablespoons of peanut butter.

Serves around 6. Cooks Best in a wok, with a lid. If not, use a fry pan.

Method:

1) Saute chicken/meat/tofu with onions

2) Add chopped vegetables, garlic, coconut cream, curry paste. Add sugar to taste.

3) Simmer on low for half an hour, with lid on.

4) Serve hot with boiled rice (or microwaved frozen rice if you are lazy). ENJOY!!!

This is a tried and true recipe, developed by me and my mum. I have eaten it about a million times. I've never seen anyone refuse a second helping- it tastes so mega good.... It freezes and reheats well also. :D :D Please give me your feedback. Haha lame pun not intended.

vegan cupcakes pwns

1 TB apple cider vinegar
1 ½ scant cups plain soymilk
2 1/8 cups flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. kosher salt
1 1/8 cups sugar
½ cup oil
1 ¼ tsp. vanilla extract
1 tsp. coconut extract
1 tbsp cinnamon

A Gourmet Chef I am Not........

Hi guys,

Just a quick little post today, responding to a question that keeps coming up...

"Do You Cook?"

or

"What's Your Favorite Thing to Cook?.....Your Specialty?......Your Secret Recipe?"...you get the idea.   Perhaps people are interested because the holidays are right around the corner or maybe I just have the Gourmet Chef look...not quite sure, but what I can say with 100% certainty is that I'm no Rachel Ray and Emeril does not need to worry ;-) 

I would love to learn to cook, however, and WILL take classes sometime soon. 

In the meantime, for all of you who are challenged in the kitchen like I am, here's a recipe I can share with you -- 

ICE. Freeze water.

But definitely ask me again in a few months after I start taking my cooking classes!

Bands reveal their secret recipes

Tired of eating the same boring dishes? Try these unique recipes brought to you exclusively by members of bands you know and trust:



Cash of The Cab: You take a piece of bread, throw everything imaginable that you want on there, plus some ketchup, its bound to taste alright.




Dan of The Fold:
- 16 slices american cheese (deli style is best)
- 1 can of Rotel

Directions: Melt cheese in a small pot with Rotel. Stir while melting. Serve w/ Ruffles. It's weird at first, but you'll grow to crave it.




Seth of The Higher: It's all about the peanut butter and banana sandwiches .




Kelly of The Dollyrots: Kelly O's Fake Chicken/No Hangover Soup

4c water
veggie stock/bullion (or chicken)... enough for 4c, +1
chopped soupish veggies (whatever you have, cut REALLY SMALL... green onion, celery, garlic, carrots)
1tsp black pepper
1tsp white pepper
1tbsp white vinegar
squeeze of lime (or lemon BUT not out of a bottle or fake plastic lemon!better off without!)
big handful of thin egg noodles (or ramen noodles, or crushed angel hair...)
1 egg white
1tbsp sesame oil
dashes of hot sauce

First boil the water, bullion, vinegar, lime and any of the veggies you can find. After it comes to a boil add the noodles. Cook according to directions. Then add the pepper, egg white, and sesame oil. Wha lah. It's usually prepared after a long night or when I'm sick.. but I think that's how I do it.
It's not rocket science... figure it out! Oh and I always hoard the spicy thai oil that I get with take-out... that's good in it too.





JR of Less Than Jake: The "perfect burger":

- 1-2 lbs. 85/15 ground beef (thats the beef to fat content...the 85/15)

- salt and pepper

- sliced cheddar chesses (or what ever variety cheese you like)

- 1 package sliced mushrooms (if you're into slicing your own, then do so, but about 8 oz.)

- 4Tbsp. Butter (not margarine or country crock bulls**t...real butter)

- 2 Tbsp. Italian seasoning

In a frying pan, melt the butter and add the mushrooms, Italian seasoning ans salt and pepper to taste. cook over medium heat until cooked down.

Form patties about 1/2" thick and 4" in diameter.  salt and pepper. cook on hot grill 5-7 minutes on each side over medium heat. flip only once! add cheese last minute of cooking.

Spread mushrooms over the top of burger and put on a good hard roll and eat the f*** out of it. Best burger ever. Promise.
