After School Snack: Macaroni And Cheese Cupcakes With Mashed Potato Frosting

There are few things that I love more than mac and cheese. Probably the only thing I love more is potatoes and cupcakes and ice cream and other sweets. This super cute recipe manages to combine all those things! Okay, so it only LOOKS like a cupcake but that’s good enough for me. This is the perfect party appetizer / after school snack and super easy to make.

Macaroni and Cheese Cupcakes

  • 1 pound cooked pasta (rotini, bowtie, or elbow macaroni is best)
  • 1/2 cup hot water, (save it from the water you boiled your pasta in)
  • 2 cups shredded sharp cheddar cheese,
  • 1 egg
  • 1 (8 oz.) package 1/3 less fat cream cheese
  • 1 teaspoon onion salt
  • ground pepper to taste
  • Panko Breadcrumbs to top

In a large bowl, whisk together the cream cheese and hot pasta water until softened. Whisk in the egg, then stir in the cheddar cheese, onion salt, and pepper.

Spoon into muffin tins prepared with cupcake wrappers and top with panko. Bake in an oven preheated to 400 degrees for 15-18 minutes or just until the tops of each ‘cupcake’ have been lightly browned. Serve warm and top with a dollop of mashed potatoes. I like using Trader Joes instant garlic mashed potatoes because I’m a pretty lazy chef.
